Homemade Christmas - No Bake Chocolate Oatmeal Drop Cookies

My mother used to make these all the time. They are easy, quick, and delicious! The perfect cookie to tuck in a handmade gift basket. Enjoy!

2 cups sugar
1/2 cup butter
1/2 cup milk
3 tbsp cocoa
3 cups uncooked quick oatsl
1 tsp vanilla
1/2 cup peanut butter (optional)
1/2 cup chopped nuts (optional)

In a saucepan combine sugar, butter, milk and cocoa. Bring to a rolling boil, stirring constantly, and boil for 1 minute. Remove from the heat. Quickly stir in the oatmeal, vanilla, peanut butter and nuts. Drop by spoonfuls onto waxed paper. Let set until firm. Makes 2 dozen.

Is it old-fashioned oats, or quick cooking oats - or does it matter? Sa-weet!

Quick Oats would be best.

Thank you so much for this recipe. My 3 little ham sandwiches (sons) are celiac and allergic to so many other things. This recipe looks like it would be a good match for them.

Two questions - do you think I could substitute almond milk and almond butter for the milk and peanut butter?

Cyndi - I think you would probably make the substitution with no problems. My grandson is allergic to wheat, soy, and dairy - I might try these with rice milk. Let me know how they turn out for you.

thank you. I had this recipe years ago. I have not been able to remember how to make them. I think they are the same as we use to have in grade school. They called them no-bake cookies. I loved them. I can't wait to make them. I hope I don't eat too many. I've gained about 5-7 lbs. since all of this cancer stuff. I haven't gone to a weight watchers meeting since Oct. I'll go back when soon. I know I can take it back off. It's too important to me. Plus, I can't go to the gym right now.
